Skillet Meals From Home

While there are hundreds of boxed meals that can be prepared in a skillet, with a minimum amount of work, you can create your own skillet meals at home.

Macaroni and cheese is a wonderful base for many of these, but there is no limit to the kind of foods that can be cooked in a skillet. Some of the most tender barbecue ribs I have ever made were made in an electric skillet, at the time I had no oven.

I boiled the ribs in beer, cooking removes the alcohol, then put them in an electric skillet, brushed them with barbecue sauce turned the skillet to simmer and put the lid on.

I let them cook for about 5 hours, checking occasionally to make sure they were not burning, and adding sauce as they were turned. They were delicious, and fall of the bone tender, give it a try sometime, you will love them!

Now back to the macaroni and cheese, while cooking the macaroni, brown hamburger in a skillet add a can of chili, when the macaroni is done add the cheese then stir into the hamburger chili mix.

Its called Chili-mac and a favorite of even the most discriminating family members! This is a little trick I learned from a true Texan, just open a small package of Fritos and add chili to the bag, only one skillet used for the chili and no dishes to wash.

Give everyone a spoon; they will love it for camping and outdoor parties. Left over roast can make a wonderful one skillet mean, just cut the roast in small pieces, add bouillon for flavor, add water and cook in the skillet until the meat is tender, add vegetables and cook until they are done and the water cooks away.

Left over pork steak is excellent when rolled in flour, and fried in olive oil; add water and rice to the mixture, the flour on the pork creates wonderful gravy for the rice.

Thanksgiving Day Feasts

Halloween is the start of the holiday seasons for many, but Thanksgiving is the beginning of the marathon cooking binges that many of us go on during the year.

This time can be one of two things, either an enjoyable family time, or a nightmare for one, you decide!

Thanksgiving and Christmas usually mean family get togethers, and lots of food, call a family conference in advance, include all of the cooks (men and women) that will be attending and decide on your menu.

After the menu is decided on, each family member chooses what they would like to bring. This allows each family to provide what they can afford without feeling like they must go into debt!

Of course, you can always bring more than you choose, a favorite pie (if it hasnt already been included in the menu), but this method guarantees that all of the basics are there.

Without any one person being responsible for everything, and without having 6 different green bean casseroles!

Different families have different basics for their holiday meals; some have turkey, while others prefer ham, some large families like both!

Many families have traditions that they follow year after year, these are important to continue generation to generation.

However some of the basics for a Thanksgiving feast are:

*Turkey and stuffing

*Honey glazed ham

*Green bean casserole

*Pies, pumpkin pie (remember the jack-o-lantern), mince meat, apple, pecan, the varieties are endless

*Mashed potatoes and gravy

*Corn on the cob

*Salads

*Cranberry sauce or whole cranberries

*Jell-O molds

*Fruit cake, (they arent all used as doorstops)

*Drinks, sodas, spiced drinks, milk, tea, again, the choices are endless

*Rolls and breads

*Cakes

There are as many different foods at a Thanksgiving dinner as there are types of people, enjoy and keep the traditions alive, maybe create a few new ones this year!

Preparing More Than One Meal at a Time

Doubling up on a recipe is seldom a lot more work than just cooking one batch. It is also one of the best ways to get a meal on the table in a hurry is to pull it out of the freezer, let it thaw during the day, then reheat.

This provides a tasty meal in a hurry that you know your family enjoys because they have already eaten it once!

Some dishes are made to double up on and others arent, fried shrimp would not be a good choice for doubling up, but meatloaf would be.

Crock-pot meals, casseroles and chili are excellent choices for doubling up. When the second batch is cool enough, just seal in a moisture and air proof baggie and stick in the freezer.

Another hint with a casserole is to freeze it in the pan it will be cooked in, when frozen, remove and put in an air proof and moisture proof bag. When it is time to cook, return it to the pan, thaw and then reheat!

You may want to divide into single servings for storage; this provides quick meals for individuals.

Before freezing use a piece of masking tape to identify the type of food it is, the number of people it will feed and the date it was prepared.

Another method of doubling up, or cooking once to eat twice is to cook extra base foods, for instance you can brown extra hamburger, and freeze for later use in tacos, lasagna, soups or stews.

Freeze in the correct quantity for the meal you will cook with it later. Another great idea is to make soups or stews out of leftover meats, leftover roast makes excellent vegetable beef soup to freeze for a cold winter evening.

Left over barbecue ribs can be cut apart and used for an exceptional hot barbecue beef sandwich.

Left over chili can be added to macaroni and cheese to make chili-mac, a favorite of children.
